What do y'all do with a gobbler after a successful hunt?

I usually just pluck and gut because I have a obsession with smoked turkey. I give the outer skin a nice coat of rub, wrap it, put it in a pan with some apple juice and smoke with pecan wood.

When it comes out, the skin has a little crispiness to it and the meat is oh so juicy.

Filet the breast, cut into cubes to make fried turkey nuggets.

Depends on how late it is when I get home with the bird.
If it was an evening hunt it's late night when I get home, I'll usually breast it out.
If it's a morning hunt I'll either pluck or skin depending on how the last bird was cleaned.

    Can't go wrong either way.
